Short Business Description For a lot of people in Jefferson, Colucci’s Pizza is not just a pizza shop — it is the pizza shop. Generations of people who grew up in and around Jefferson will tell you the same thing, and for many of them Colucci’s simply tastes like home. Its reputation reaches well beyond Ashtabula County; people who moved away to the Mahoning Valley and elsewhere still rank it above anything they can find closer to home. That kind of loyalty is rare, and it explains a great deal about what happened next.

In September 2025, a fire broke out around 1 a.m. at the South Chestnut Street plaza that housed Colucci’s, with firefighters arriving to find flames coming through the roof of the building at 124 S. Chestnut St. The same plaza was home to Mr. Hero and Stevens Coin Laundry. Owner Ryan Stevens later explained the cause as shop rags that combusted overnight and set the building alight. The damage was severe enough that the brick-and-mortar shop could not simply reopen, and the rebuild has been underway ever since.

Rather than close the doors and wait out the construction, Stevens and his son came up with a different plan — a food truck, so they could keep feeding their customers in the meantime. The truck launched in early March 2026, parked in the lot of the damaged building, and word spread immediately; on the very first day they had to stop taking orders by 5 p.m. and were still cooking the backlog until 9:30 that night. Customers drove in from Ashtabula and beyond once they heard Colucci’s was back. The result is one of the more unusual sights in Ashtabula County: a food truck doing a brisk business in front of the shell of the restaurant it came from, while contractors work on the building behind it.

As of now, that is still how Colucci’s operates — the truck out front, the restoration ongoing behind it. Because food truck hours are not the same as restaurant hours and can shift with weather, staffing and the pace of construction, the Colucci’s Pizza Facebook page is the place to check before you go. That is where they post their current schedule, closures and updates on the rebuild, and it is the most reliable source for when the truck is serving. If you are planning a large order, call ahead — demand has been heavy since day one, and the truck can only cook so fast.
Starting Monday October 5th, Colucci's Pizza hours for the pizza truck will be as shown below:
Sunday - Thursday: 11-8
Friday & Saturday: 11-9
